Spicy Peanut Chicken Meatballs

Ingredients:

  • 450 gr ground chicken meat

  • 2/3 cup ground flaxseed

  • 1 tablespoon olive oil

  • 2 tablespoons peanut butter (almond butter can be used if preferred)

  • 1 tablespoon apple cider vinegar

  • 1 teaspoon sesame oil

  • 2 tablespoons tomato paste (Pomi, Cirio, etc)

  • 1 teaspoon chili flakes

Preparation:

  • In a deep bowl combine the chicken with the ground flaxseed.

  • Heat a large skillet over medium-high heat and add the olive oil. Form small meatballs so that you get approximately 15 and place them in the hot skillet.

  • Sear and brown the meatballs on all sides, then lower the heat to medium-low and finish cooking the meatballs.

  • Prepare the sauce: in a deep bowl combine the peanut butter, vinegar, sesame oil, tomato paste, and chili flakes. It’s a fairly thick mixture so you can add a splash of water.

  • Add the sauce to the skillet with meatballs, stir to coat all the meat well. Let cook for two more minutes or until the sauce thickens well.

  • Serve
