Avocados Stuffed with Quinoa Salad

This recipe is perfect for weekends and although it is somewhat high in fat content, we shouldn't worry because it provides good fat. However, we should be a little more careful in choosing what we're going to serve with this dish.

This recipe is perfect for weekends and although it is somewhat high in fat content, we shouldn’t worry because it provides good fat. However, we should be a little more careful in choosing what we’re going to serve with this dish.

Approximate Nutritional Content: (1/2 avocado)

  • Calories: 195 kcal

  • Grams of fat: 16 gr. equivalent to 3 fat servings.

  • Grams of carbohydrate: 5 gr.

  • Grams of protein: 9 gr. equivalent to 1 protein serving

Note: nutritional information may vary according to the quantity and type of ingredients used.

Ingredients:

  • 2 cups of cooked quinoa

  • 1/4 cup of onion (purple) finely chopped

  • 1/2 cup of cucumber finely diced

  • 1/2 cup of tomatoes in cubes

  • 2 tablespoons of cilantro chopped

  • 2 tablespoons of olive oil

  • 1 teaspoon of red wine vinegar

  • 1/2 teaspoon of salt

  • 4 ripe avocados halved

Preparation Steps:

  • Prepare the quinoa following the package instructions. Once ready, transfer to a large bowl.

  • Add the onion, cucumber, tomato, cilantro, olive oil, vinegar and salt. Mix well.

  • Cut each avocado in half and carefully remove the skin (it should remain intact).

  • Place approximately 2 tablespoons of salad inside the avocado. Serve.
