Chickpea and Sweet Potato Patties

This recipe is special for people who don’t eat red meat or are strict vegetarians. It’s a nutritionally rich alternative that can be eaten alone or as a burger.

  • Grams of protein: 15 gr. equals 2 servings of protein

  • Grams of fat: 10 gr. equals 2 servings of fat

  • Grams of carbohydrates: 50 gr. equals 2 servings of grains

Ingredients: (4 patties)

  • 1 1/4 cups of chickpeas

  • Cooking spray oil

  • 3 tablespoons of tahini (sesame paste)

  • 1/4 teaspoon of black pepper

  • 1/4 teaspoon of baking powder

  • 3/4 teaspoon of salt

  • 1 small sweet potato, grated

Steps to Follow:

  • In a deep bowl, place the chickpeas with 4 cups of water and let them soak for 12 to 24 hours. Once the time has passed, drain the water.

  • Preheat the oven to 375 degrees and spray cooking oil on a baking sheet.

  • In a food processor, place the chickpeas, tahini, pepper, baking powder, and salt. Process until the mixture is incorporated and doesn’t separate.

  • Transfer the mixture to a deep bowl and add the sweet potato (cooked). Mix.

  • Form 4 patties with the mixture and place on the baking sheet. Cover with aluminum foil. Bake for 20 minutes.

  • Remove from oven, remove the aluminum foil and spray the patties with cooking oil. Bake until golden (20 - 25 minutes).

  • Remove, flip the patties and spray with oil, bake for another 10 minutes.
