1 cup breadcrumbs
1/2 teaspoon basil (fresh or dried)
1/2 teaspoon oregano (fresh or dried)
1/4 cup freshly grated Parmesan cheese
1 tablespoon olive oil
2 egg whites
1 tablespoon water
4 boneless chicken breasts cut into cubes
Salt and pepper to taste
Preheat oven to 350 degrees. Place aluminum foil with cooking spray on a baking sheet.
In a shallow plate, combine breadcrumbs, basil, oregano, and cheese. Mix well.
In a deep plate, place egg whites, oil, and water. Emulsify.
Season the chicken with salt and pepper to taste, dip in egg mixture, then coat with breadcrumbs and herbs.
Place the chicken on the baking sheet and cook for 10 minutes. Then, using tongs, flip the chicken and cook for 5 more minutes or until cooked through.
