This dish is high in protein but low in calories. It’s refreshing and can be enjoyed with your favorite side dish and vegetables.
Calories: 280 kcal.
Grams of fat: 13 gr. equals 2 fat servings
Grams of protein: 35 gr. equals 5 protein servings
Grams of carbohydrates: 6 gr. equals 1/2 grain serving

2 cups cucumber diced
1/4 cup onion finely chopped
1/4 cup tomato diced
2 tablespoons fresh basil finely chopped
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons olive oil
2 tablespoons white vinegar
3 packets Splenda
4 salmon fillets
Combine all ingredients (except salmon) in a deep bowl. Refrigerate for 1 hour.
Season salmon with salt and pepper to taste.
Heat a skillet with cooking spray over medium-high heat. Cook until well done.
Once salmon is cooked, top with 1/2 cup of cucumber sauce.
