Salmon with cucumber sauce

This dish is high in protein but low in calories. It’s refreshing and can be enjoyed with your favorite side dish and vegetables.

Approximate Nutritional Content: (1 fillet with 1/2 cup sauce)

  • Calories: 280 kcal.

  • Grams of fat: 13 gr. equals 2 fat servings

  • Grams of protein: 35 gr. equals 5 protein servings

  • Grams of carbohydrates: 6 gr. equals 1/2 grain serving

Note: nutritional content may vary according to the quantity and type of ingredients used.

Ingredients: recipe for 4 servings

  • 2 cups cucumber diced

  • 1/4 cup onion finely chopped

  • 1/4 cup tomato diced

  • 2 tablespoons fresh basil finely chopped

  • 1/4 teaspoon salt

  • 1/4 teaspoon pepper

  • 2 tablespoons olive oil

  • 2 tablespoons white vinegar

  • 3 packets Splenda

  • 4 salmon fillets

Preparation:

  • Combine all ingredients (except salmon) in a deep bowl. Refrigerate for 1 hour.

  • Season salmon with salt and pepper to taste.

  • Heat a skillet with cooking spray over medium-high heat. Cook until well done.

  • Once salmon is cooked, top with 1/2 cup of cucumber sauce.
