This dressing is delicious when added to your salads and has an Asian touch. It’s a different way to consume your daily vegetables.

1/4 cup shredded carrot
1/4 cup finely chopped onion
1 tablespoon shredded ginger
1 small garlic clove
1 tablespoon finely chopped celery
3 tablespoons sesame or peanut oil
3 tablespoons rice vinegar
2 tablespoons water
1 tablespoon tomato paste
2 teaspoons soy sauce
1 1/2 teaspoons sugar
1 teaspoon lemon juice
salt and pepper to taste
Place all ingredients in the blender and blend until everything is incorporated and smooth.
Refrigerate for 1-2 hours so the flavors settle. It tastes better the longer it sits in the refrigerator.
Serve with your favorite salad.
