Now it’s dessert’s turn! I usually share recipes for main dishes, side dishes, and salads, but today I wanted something different and sweet, and most importantly, something that won’t disrupt our healthy eating plan. These cookies have excellent flavor and we can use them as a dessert or snack.
Calories: 100 kcal.
Grams of fat: 5 gr. equivalent to 1 serving of fat.
Grams of protein: 2 gr.
Grams of carbohydrates: 13 gr. equivalent to 1 serving of flour

Ingredients: (recipe for approximately 30 cookies)
3/4 cup melted butter
1 cup Splenda for baking
2 teaspoons lemon zest
2 teaspoons molasses
2 large eggs
1/2 cup unsweetened applesauce
1/3 cup concentrated apple juice
1 3/4 cup flour
2/3 cup oats
1 teaspoon baking soda
1 1/2 teaspoon ground cinnamon
1/8 teaspoon (1 pinch) nutmeg
1 cup apple cut into cubes
1/2 cup raisins
Preheat oven to 325 degrees. Spray a baking sheet with cooking spray.
Beat for one minute at high speed, in an electric mixer, the butter, splenda, lemon zest, and molasses. Add the eggs (1 at a time) until the egg yolk color disappears.
On the other hand, combine the applesauce with the apple juice, set aside.
Combine in a deep bowl, the flour, oats, baking soda, cinnamon, and nutmeg. Gradually add to the butter mixture in the mixer, alternating with the applesauce mixture (starting and ending with the flour mixture). Beat at low speed. Last, add the apple pieces and raisins.
Place on the baking sheet, two finger widths apart, one tablespoon of cookie mixture.
Bake for 10 to 12 minutes. Let cool.
