As I've said many times before, breakfast is one of the most important meals of the day, so I'm sharing this recipe with you to treat yourself whether it's the weekend or any weekday. It turns out delicious and is simple to make.

As I’ve said many times before, breakfast is one of the most important meals of the day, so I’m sharing this recipe with you to treat yourself whether it’s the weekend or any weekday. It turns out delicious and is simple to make.

Approximate Nutritional Content: 1 burrito

  • Calories: 290 kcal.

  • Grams of fat: 10 gr., equivalent to 2 servings of fat

  • Grams of carbohydrates: 30 gr., equivalent to 2 servings of grains/vegetables

  • Grams of protein: 20 gr., equivalent to 2.5 servings of protein.

Note: nutritional information may vary depending on the quantity and type of ingredients used.

Ingredients:

  • 1 tablespoon olive oil

  • 1/2 cup diced onion and sweet bell pepper

  • 2 egg whites

  • 1/2 cup black beans, already cooked

  • 1 large whole wheat tortilla (can be whole grain)

  • 15 gr shredded cheese (mozzarella, cheddar)

  • 1/4 cup diced tomato

Preparation:

  • In a skillet over medium heat, add the oil.

  • Add the onion and sweet bell pepper and cook until soft.

  • Add the egg whites to the skillet (you can add some beans if desired). Cook the egg (should be scrambled eggs).

  • Once the egg mixture is cooked, place it on top of the tortilla, add the cheese and tomato, and fold burrito-style.

  • Serve with the remaining beans and extra tomato if desired.
