This recipe is rich in vitamins and minerals and although it contains bacon, it is not high in calories. It can be enjoyed at lunch time as a complement to a main dish.

Grams of fat: 4 gr. equals 1 fat serving
Grams of protein: 5 gr. equals 1/2 protein serving
Grams of carbohydrates: 9 gr. equals 1/2 grain/vegetable serving

1 bag of spinach (baby spinach if possible)
1/2 cup croutons (store-bought or homemade)
1/4 cup white vinegar
1/4 cup water
1/4 cup Dijon mustard
3 tablespoons Splenda
5 strips turkey bacon
1/4 cup finely diced onion
2 cloves garlic, finely minced
Place the cleaned spinach leaves in a deep bowl, add the croutons and set aside.
In a small deep bowl, combine and mix the vinegar, water, mustard and Splenda. Set aside.
Cut the bacon into small strips, place in a skillet over medium-high heat and fry until crispy (about 3-4 minutes).
Add the onion and garlic to the skillet, cook over medium-high heat for 2 minutes.
Add the vinegar mixture to the skillet, let it simmer for 2 minutes.
Pour the sauce over the spinach and croutons, serve.
