1 large bell pepper
2 hard-boiled eggs
1/2 avocado
1 teaspoon of finely chopped chives
1 tablespoon of crispy bacon
Salt and pepper to taste
Cut the bell pepper in half, removing the top along with the seeds. Set aside.
With a fork, mash the remaining ingredients until you obtain a paste and everything is well mixed.
Fill each bell pepper half with the egg salad, garnish with chives and bacon.
