Grams of carbohydrates: 26 gr. equals 1.5 fruit and vegetable portions
Grams of protein: 5 gr. equals half a protein portion

20 fresh mint leaves
1 teaspoon honey
1 teaspoon lemon juice
1 teaspoon olive oil
a pinch of salt
250 gr. cooked or canned beets
1 large pear
30 gr. crumbled goat cheese
28 gr walnuts
To make the dressing, place the mint, honey, lemon juice, olive oil and salt in a deep bowl, stir well and set aside
Place the sliced pear, beets in chunks, goat cheese and walnuts in a large deep bowl.
Add the dressing to the pear mixture and stir well to coat all ingredients.
Serve on two plates.
