This salad perfectly combines fruit, healthy fats and vegetables. It’s perfect to eat on its own or as a side to a protein. Like any salad, it’s very simple to prepare.

  • Calories: 245 kcal.

  • Grams of fat: 14 gr equals 3 fat portions

  • Grams of carbohydrates: 26 gr. equals 1.5 fruit and vegetable portions

  • Grams of protein: 5 gr. equals half a protein portion

Ingredients:

  • 20 fresh mint leaves

  • 1 teaspoon honey

  • 1 teaspoon lemon juice

  • 1 teaspoon olive oil

  • a pinch of salt

  • 250 gr. cooked or canned beets

  • 1 large pear

  • 30 gr. crumbled goat cheese

  • 28 gr walnuts

Preparation:

  • To make the dressing, place the mint, honey, lemon juice, olive oil and salt in a deep bowl, stir well and set aside

  • Place the sliced pear, beets in chunks, goat cheese and walnuts in a large deep bowl.

  • Add the dressing to the pear mixture and stir well to coat all ingredients.

  • Serve on two plates.
