Sautéed beef tenderloin with broccoli

This delicious recipe is perfect for any lunch. It can be served with rice as shown in this menu or simply with steamed vegetables. Very low in calories but full of flavor.

Approximate Nutritional Content: 1 1/2 cup meat and 1/2 cup rice

  • Calories: 310 kcal

  • Carbohydrates: 31 gr. equivalent to 2 servings of grains/vegetables

  • Protein: 15 gr. equivalent to 2 servings of protein

  • Fat: 14 gr. equivalent to 3 servings of fat

Note: nutritional value may vary according to the quantity and type of ingredients used.

Ingredients:

  • 4 tablespoons chicken broth

  • 1 tablespoon cornstarch

  • 2 tablespoons soy sauce

  • 2 tablespoons oil

  • 1/4 cup onion, finely chopped

  • 2 cloves garlic, finely chopped

  • 1/2 sweet bell pepper, finely chopped

  • 3 cups broccoli

  • 250 gr beef

  • 2 medium tomatoes, sliced

  • 1/2 cup cilantro, chopped

  • 2 cups cooked rice

Preparation:

  • Prepare a sauce by combining in a bowl the chicken broth, cornstarch, and soy sauce. Mix and set aside.

  • In a pan over medium heat, add the oil and sauté the onion, garlic, sweet bell pepper, and broccoli until cooked (5-7 minutes). Remove from pan and set aside.

  • In the same pan, add the beef and cook for approximately 5-7 minutes.

  • Add the cooked vegetables, sauce, and tomato to the pan. Stir and cook until the sauce thickens.

  • Serve with 1/2 cup rice and two tablespoons of finely chopped cilantro.
