28 gr. of walnuts
1 tablespoon grated Parmesan cheese
3 garlic cloves
1/2 teaspoon salt
1 teaspoon lemon juice
2 cups arugula
3 cups spinach
1/4 cup olive oil
In a skillet, toast the walnuts over medium heat until they start to smell toasted.
In a food processor, place the walnuts, garlic, and Parmesan cheese. Process until well mixed and cut into small pieces.
Add to the processor the salt, lemon juice, spinach, and arugula. Process while adding the oil little by little. Once all the oil is incorporated, it should have a paste-like consistency.
Serve with your preferred pasta.
