Ingredients:

  • 28 gr. of walnuts

  • 1 tablespoon grated Parmesan cheese

  • 3 garlic cloves

  • 1/2 teaspoon salt

  • 1 teaspoon lemon juice

  • 2 cups arugula

  • 3 cups spinach

  • 1/4 cup olive oil

Preparation:

  • In a skillet, toast the walnuts over medium heat until they start to smell toasted.

  • In a food processor, place the walnuts, garlic, and Parmesan cheese. Process until well mixed and cut into small pieces.

  • Add to the processor the salt, lemon juice, spinach, and arugula. Process while adding the oil little by little. Once all the oil is incorporated, it should have a paste-like consistency.

  • Serve with your preferred pasta.
