This pasta is super quick to make, requires few ingredients and perfectly combines fats, proteins, vegetables and carbohydrates. We can enjoy it at dinner or lunch time.

Ingredients:

  • 225 gr. of short pasta (penne)

  • 2 slices of bacon

  • 1/2 cup of finely diced onion

  • 2 1/2 cups of asparagus cut into pieces

  • 1 1/2 cup of fat-free chicken broth

  • 4 cups of spinach

  • 1/2 cup of grated Parmesan cheese

  • 1/4 teaspoon of black pepper

Preparation:

  • Cook the pasta according to package directions, omitting the salt and fat that needs to be added. Drain the pasta and keep warm.

  • In a skillet over medium heat cook the bacon pieces until crispy. Remove from skillet.

  • In the same skillet sauté the onion for approximately 1 minute. Add the asparagus and chicken broth, bring to a boil. Lower heat and simmer for 5 minutes.

  • Add to the skillet the cooked pasta, spinach, 1/4 cup of grated cheese and pepper, stir well.

  • Serve on a plate and sprinkle with the bacon and remaining cheese.
