This fish is a healthy option for fried or breaded dishes. You can serve it with a portion of steamed vegetables to complete a light meal. It’s quite quick to make and the whole family will love it.

2 egg whites, beaten
1 cup breadcrumbs or panko
1/2 teaspoon paprika
3/4 teaspoon onion powder
3/4 teaspoon garlic powder
4 cod fillets or fish of your choice
1 teaspoon black pepper
cooking spray oil
1/4 cup light mayonnaise
1 teaspoon fresh dill, finely chopped
1 teaspoon lemon juice
lemon slices
Place the egg whites in a shallow dish.
Combine in another dish the breadcrumbs, paprika, onion powder and garlic powder, stir well.
Season the fish with salt and pepper, then dip each fillet in the egg whites and coat with the breadcrumb mixture.
Spray a skillet with cooking spray, heat over medium-high heat. Place the fish fillets in the skillet and cook approximately 4 minutes on each side or until golden brown.
To make the sauce, combine in a shallow dish the mayonnaise, lemon juice, and dill. Serve the fish together with the sauce and lemon slices.
