Crispy fish with lemon and dill sauce

This fish is a healthy option for fried or breaded dishes. You can serve it with a portion of steamed vegetables to complete a light meal. It’s quite quick to make and the whole family will love it.

Ingredients:

  • 2 egg whites, beaten

  • 1 cup breadcrumbs or panko

  • 1/2 teaspoon paprika

  • 3/4 teaspoon onion powder

  • 3/4 teaspoon garlic powder

  • 4 cod fillets or fish of your choice

  • 1 teaspoon black pepper

  • cooking spray oil

  • 1/4 cup light mayonnaise

  • 1 teaspoon fresh dill, finely chopped

  • 1 teaspoon lemon juice

  • lemon slices

Preparation:

  • Place the egg whites in a shallow dish.

  • Combine in another dish the breadcrumbs, paprika, onion powder and garlic powder, stir well.

  • Season the fish with salt and pepper, then dip each fillet in the egg whites and coat with the breadcrumb mixture.

  • Spray a skillet with cooking spray, heat over medium-high heat. Place the fish fillets in the skillet and cook approximately 4 minutes on each side or until golden brown.

  • To make the sauce, combine in a shallow dish the mayonnaise, lemon juice, and dill. Serve the fish together with the sauce and lemon slices.
