For people looking to incorporate quinoa into their diets, this is a different and delicious way to do it. They are quite healthy and we can combine them with a carbohydrate or vegetable and add a natural sauce.

Approximate Nutritional Content: Recipe makes 24 meatballs, nutritional value per 1 meatball

  • Calories: 70 kcal.

  • Fat grams: 4.4 gr. equivalent to 1 fat serving

  • Protein grams: 4.4 gr equivalent to half a protein serving

  • Carbohydrate grams: 3.2 gr.

Ingredients:

  • 1/2 cup quinoa

  • 450 gr. ground meat

  • 1/2 cup finely chopped green onion

  • 4 garlic cloves, finely minced

  • 2 eggs

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon red pepper flakes

  • 1/2 teaspoon paprika

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon dried parsley

  • 1/4 teaspoon cinnamon

Preparation:

  • Preheat oven to 350 degrees and cover a baking sheet with aluminum foil.

  • Place the quinoa in a pot with one cup of water, bring to a boil, reduce heat, cover and cook until all water has evaporated, 10 to 15 minutes. Once done, transfer to a bowl and let cool.

  • Place the remaining ingredients in the bowl with quinoa and stir until well combined.

  • Form meatballs the size of a golf ball, place them in rows on the baking sheet. Bake until golden, approximately 12-15 minutes. Remove and serve.
