1/2 cup quinoa
450 gr. ground meat
1/2 cup finely chopped green onion
4 garlic cloves, finely minced
2 eggs
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes
1/2 teaspoon paprika
1/2 teaspoon dried oregano
1/2 teaspoon dried parsley
1/4 teaspoon cinnamon
Preheat oven to 350 degrees and cover a baking sheet with aluminum foil.
Place the quinoa in a pot with one cup of water, bring to a boil, reduce heat, cover and cook until all water has evaporated, 10 to 15 minutes. Once done, transfer to a bowl and let cool.
Place the remaining ingredients in the bowl with quinoa and stir until well combined.
Form meatballs the size of a golf ball, place them in rows on the baking sheet. Bake until golden, approximately 12-15 minutes. Remove and serve.
