Ingredients:

  • 1 cup peeled garlic cloves

  • 1 teaspoon salt

  • 4 cups canola oil

  • 1/4 cup lemon juice

Preparation:

  • Place the garlic and salt in a food processor, process until smooth texture is achieved.

  • Turn the food processor on again and slowly incorporate the oil, starting with 1/2 cup. Once that half cup is incorporated, add 1 teaspoon of lemon juice.

  • Repeat the process of alternating between the oil and lemon juice until both ingredients are finished. Doing it this way guarantees proper emulsification of ingredients.

  • You’ll know it’s ready when the sauce is white, thick, and has a consistency similar to mayonnaise.

Bon appétit!

  • If you don’t have canola oil, do not use olive oil. You can substitute with vegetable or corn oil.
