This is a pizza variation for vegetarians or those watching their carbohydrate intake. It’s perfect for a light dinner or even as a snack.

  • Calories: 170 kcal.

  • Grams of protein: 10 gr. equals 1.5 servings of protein

  • Grams of fat: 5 gr. equals 1 serving of fat

  • Grams of carbohydrate: 23 gr. equals 1.5 servings of carbohydrate

Ingredients:

  • 2 slices of butternut squash, one centimeter thick

  • 1/4 cup of natural tomato sauce, seasoned to taste

  • 30 gr of shredded cheese (mozzarella, cheddar, or Mexican blend)

  • Parsley, to taste

Preparation Method:

  • Preheat the oven, preferably on broil.

  • Spray a baking sheet with cooking oil spray, place the squash slices and bake for 10 minutes to brown (on the second shelf of the oven).

  • Flip the squash slices and place half of the sauce and cheese on each one.

  • Return to the oven and broil for 2-3 minutes or until the cheese is melted.

  • Remove from the oven and sprinkle with parsley.
