2 slices of butternut squash, one centimeter thick
1/4 cup of natural tomato sauce, seasoned to taste
30 gr of shredded cheese (mozzarella, cheddar, or Mexican blend)
Parsley, to taste
Preheat the oven, preferably on broil.
Spray a baking sheet with cooking oil spray, place the squash slices and bake for 10 minutes to brown (on the second shelf of the oven).
Flip the squash slices and place half of the sauce and cheese on each one.
Return to the oven and broil for 2-3 minutes or until the cheese is melted.
Remove from the oven and sprinkle with parsley.
