2 boneless, skinless chicken breasts
2 tablespoons hot sauce, spicy chili (brand of your choice), add more if you prefer it spicier.
2 teaspoons olive oil
2 romaine lettuces cut into strips (approximately 8 cups)
4 celery stalks, finely chopped
2 grated carrots
2 green onions, finely chopped
1/2 cup light Ranch or blue cheese dressing
Place the chicken between parchment paper and flatten with a meat mallet until it reaches an even thickness. Cut into strips approximately 1/2 inch wide.
In a deep bowl, combine the hot sauce with the oil, add the chicken and stir until completely coated.
Preheat the oven to broil setting. Arrange the chicken in a single layer on a baking sheet. Broil in the oven and cook for 4 to 6 minutes (until cooked through), turning once.
In a large deep bowl, combine the lettuce, celery, carrots, and green onions. Add the dressing and toss everything well.
Divide the lettuce mixture into 4 plates, place the chicken strips on top of each plate, serve with extra spice if desired.
