Buffalo Chicken Salad

For spice lovers, here’s a healthy way to enjoy it. This recipe works perfectly for dinner or lunch.

  • Calories: 254 kcal.

  • Grams of fat: 10 gr. equivalent to 2 fat servings

  • Grams of protein: 31 gr. equivalent to 4 protein servings.

  • Grams of carbohydrate: 10 gr, equivalent to 1/2 carbohydrate/vegetable serving.

Note: nutritional information may vary depending on the quantity and type of ingredients used.

Ingredients:

  • 2 boneless, skinless chicken breasts

  • 2 tablespoons hot sauce, spicy chili (brand of your choice), add more if you prefer it spicier.

  • 2 teaspoons olive oil

  • 2 romaine lettuces cut into strips (approximately 8 cups)

  • 4 celery stalks, finely chopped

  • 2 grated carrots

  • 2 green onions, finely chopped

  • 1/2 cup light Ranch or blue cheese dressing

Preparation:

  • Place the chicken between parchment paper and flatten with a meat mallet until it reaches an even thickness. Cut into strips approximately 1/2 inch wide.

  • In a deep bowl, combine the hot sauce with the oil, add the chicken and stir until completely coated.

  • Preheat the oven to broil setting. Arrange the chicken in a single layer on a baking sheet. Broil in the oven and cook for 4 to 6 minutes (until cooked through), turning once.

  • In a large deep bowl, combine the lettuce, celery, carrots, and green onions. Add the dressing and toss everything well.

  • Divide the lettuce mixture into 4 plates, place the chicken strips on top of each plate, serve with extra spice if desired.
