This dish seems to me a different and fun way to consume light protein. In addition to being versatile since it can be used as a snack or appetizers for a social event.

  • Carbohydrates (grams): 17 gr. equals 1 vegetable serving

Ingredients:

  • 1 large cucumber

  • 1 carrot cut into thin and small strips

  • 1 large can of tuna in water

  • 1 tablespoon of plain yogurt

  • 1 teaspoon of lemon juice

  • salt and pepper to taste

Preparation:

  • Using a knife or mandoline, cut the cucumber lengthwise (should be in thin strips).

  • Mix in a deep plate the tuna (drained), yogurt, lemon juice, salt and pepper.

  • To make the rolls: place a tablespoon of tuna mixture at one end of the cucumber strip, add a couple of carrot strips and roll up.

  • To hold the rolls together, we can secure them with toothpicks.
