1 thick slice of eggplant (approximately 1 finger thick)
1 thick slice of red onion (approximately 1.5 fingers thick)
1 teaspoon of olive oil
Salt to taste (sea salt preferably)
1 tablespoon of onion-flavored cheese
1 hamburger bun or Bimbo thins bread
1/2 cup raw spinach
Coat the onion and eggplant with olive oil. Sprinkle both sides with salt.
Place the vegetables on a grill over medium heat (if you don’t have a grill, you can cook them in a skillet or oven griddle). Cook for 4-5 minutes or until the eggplant is soft.
When the vegetables are at the desired point, place cream cheese on top of both, cover the grill and let the cheese heat through.
Toast the buns.
Place the bread on a plate, top with spinach, onion, and eggplant. Assemble the burger.
