For vegetarians, this option is ideal and delicious. If you’re not vegetarian, this dish is still perfect for trying something new. It’s a fairly light and easy-to-make recipe.

  • Calories: 240 kcal

  • Grams of fat: 2g

  • Grams of carbohydrates: 35g, equivalent to 2 servings of grains/vegetables

  • Grams of protein: 9g, equivalent to 1 serving of protein

Note: nutritional information may vary depending on the quantity and type of ingredients used.

Ingredients:

  • 1 thick slice of eggplant (approximately 1 finger thick)

  • 1 thick slice of red onion (approximately 1.5 fingers thick)

  • 1 teaspoon of olive oil

  • Salt to taste (sea salt preferably)

  • 1 tablespoon of onion-flavored cheese

  • 1 hamburger bun or Bimbo thins bread

  • 1/2 cup raw spinach

Preparation:

  • Coat the onion and eggplant with olive oil. Sprinkle both sides with salt.

  • Place the vegetables on a grill over medium heat (if you don’t have a grill, you can cook them in a skillet or oven griddle). Cook for 4-5 minutes or until the eggplant is soft.

  • When the vegetables are at the desired point, place cream cheese on top of both, cover the grill and let the cheese heat through.

  • Toast the buns.

  • Place the bread on a plate, top with spinach, onion, and eggplant. Assemble the burger.
