Perfect for those warmer days, this refreshing dish is ideal and easy to pair with a protein source as a side dish.

Approximate Nutritional Content: 1 serving (1 cup)

  • Calories: 148 kcal.

  • Grams of fat: 7.5 gr. equivalent to 1.5 fat servings

  • Grams of carbohydrates: 12.5 gr. equivalent to 1 vegetable/fruit serving

  • Grams of protein: 2 gr.

Ingredients:

  • 4 cups of spinach (baby spinach if possible)

  • 1 avocado, cubed

  • 2 cups of strawberries halved or sliced

  • 1/2 cup of green onion

  • 1/2 cup of olive oil

  • 1/4 cup of lemon juice

  • 1 tablespoon of sugar

  • 2 tablespoons of Dijon mustard

  • 1/2 teaspoon of salt

  • pepper to taste

  • 1/4 cup of sliced almonds

Preparation:

  • In a large deep plate, place the spinach, avocado, strawberries, and green onion.

  • In a container with a lid, combine the olive oil, lemon juice, mustard, sugar, salt, and pepper. Cover and shake to mix.

  • Drizzle the salad with the oil mixture and place the almonds on top.
