Perfect for those warmer days, this refreshing dish is ideal and easy to pair with a protein source as a side dish.

4 cups of spinach (baby spinach if possible)
1 avocado, cubed
2 cups of strawberries halved or sliced
1/2 cup of green onion
1/2 cup of olive oil
1/4 cup of lemon juice
1 tablespoon of sugar
2 tablespoons of Dijon mustard
1/2 teaspoon of salt
pepper to taste
1/4 cup of sliced almonds
In a large deep plate, place the spinach, avocado, strawberries, and green onion.
In a container with a lid, combine the olive oil, lemon juice, mustard, sugar, salt, and pepper. Cover and shake to mix.
Drizzle the salad with the oil mixture and place the almonds on top.
