This recipe seemed super interesting to try. It’s quite light and can be used as part of breakfast or for coffee time. I hope you try it.

1 1/2 cup whole wheat flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons cinnamon
1/2 cup pineapple, chopped and drained
1 cup papaya
1/3 cup yogurt
1 beaten egg
2 tablespoons canola oil
1/2 cup sugar
1/2 cup agave syrup
1/2 cup walnuts
1/2 cup raisins or dried cranberries
Preheat the oven to 350 degrees.
In a deep bowl, mix the flour, baking powder, baking soda, and cinnamon.
In a food processor or blender, purée the pineapple, papaya, and yogurt. Add the egg, oil, sugar, and syrup.
Combine the flour mixture with the pineapple mixture. Add the walnuts and raisins.
In a muffin pan (with muffin liners) place approximately one tablespoon of batter. Bake for 20 to 22 minutes or until the top is golden. Remove from the oven and let cool.
