These meatballs are delicious served with rice or pasta. They are very simple to make and offer a different way to prepare them.

Ingredients:

  • 480 gr lean ground beef

  • 2/3 cup ricotta cheese

  • 1/3 cup grated parmesan cheese

  • 2 beaten egg whites

  • 1 clove garlic, minced

  • 1/4 cup parsley, finely chopped

  • 1/2 teaspoon salt

  • 1/4 teaspoon nutmeg

  • 1/4 teaspoon pepper

Preparation:

  • Preheat oven to 400 degrees. Cover a baking sheet with aluminum foil and spray with cooking oil spray. Set aside.

  • In a medium bowl, combine the meat with ricotta cheese, parmesan, egg whites, garlic, parsley, salt, pepper and nutmeg. Mix everything together.

  • Using an ice cream scoop, form the meatballs and place them lined up on the baking sheet.

  • Bake for 20 to 25 minutes or until golden.

  • Serve with your preferred side dish.
