Beet Sandwich

This sandwich is super quick to make and combines protein, vegetables, and grains. We can enjoy it with an extra serving of salad and some fruit and a refreshing drink. It can be a great option for a party or picnic.

  • Calories: 205 kcal.

  • Grams of fat: 7 gr. equals 1.5 fat servings

  • Grams of carbohydrates: 26 gr. equals 2 grain/vegetable servings

  • Grams of protein: 12 gr. equals 2 protein servings

Ingredients:

  • 2 slices of whole wheat bread or 1 Bimbo whole wheat thins bread

  • 30 gr of fresh mozzarella cheese cut into two slices

  • 1/2 cup spinach

  • 2 slices of canned beets

  • powdered basil

  • balsamic vinegar

Preparation:

  • Heat a skillet with cooking spray oil (medium heat).

  • Place one of the bread slices in the skillet and put one slice of cheese on top. On top of that place the spinach, the beets, and lastly the other slice of cheese. Sprinkle with the dried basil and balsamic vinegar. Place the other slice of bread to close the sandwich.

  • Cook for 2-3 minutes on each side, pressing to compress the sandwich.

  • Remove from the skillet and cut in half.
