Rice with Coconut and Green Lentils

This recipe is a quite different way to prepare rice. We can combine it with some Caribbean or tropical style meat preparation or a salad. It’s very quick to make and quite balanced in nutrients.

Approximate Nutritional Content: 1/2 cup (recipe makes 4 servings)

  • Calories: 147 kcal.

  • Grams of fat: 3 gr. equals half a fat serving

  • Grams of carbohydrates: 25 gr. equals 1.5 carbohydrate servings

  • Grams of protein: 5 gr. equals 1 protein serving

Ingredients:

  • 1 cup brown rice

  • 1/2 cup green lentils

  • 3 cups coconut water

  • 1 cup coconut milk (light if possible)

  • 1/2 teaspoon salt

Preparation:

  • In a medium pot over high heat, combine the coconut water, coconut milk, rice and salt. Bring to a boil, reduce heat, cover and let cook for 5 minutes.

  • Add the lentils to the pot, stir and cover again. Cook for 40 to 45 minutes approximately or until all the liquid has evaporated.

  • Once the rice is ready, turn off the heat and let rest for 5 minutes, then fluff the rice with a fork and serve.
