This recipe is a quite different way to prepare rice. We can combine it with some Caribbean or tropical style meat preparation or a salad. It’s very quick to make and quite balanced in nutrients.

1 cup brown rice
1/2 cup green lentils
3 cups coconut water
1 cup coconut milk (light if possible)
1/2 teaspoon salt
In a medium pot over high heat, combine the coconut water, coconut milk, rice and salt. Bring to a boil, reduce heat, cover and let cook for 5 minutes.
Add the lentils to the pot, stir and cover again. Cook for 40 to 45 minutes approximately or until all the liquid has evaporated.
Once the rice is ready, turn off the heat and let rest for 5 minutes, then fluff the rice with a fork and serve.
