Ingredients:

  • 500 grams fresh or frozen gnocchi

  • 2 tablespoons butter

  • 2 scallions, thinly sliced

  • 500 gr zucchini (approximately 3 small), cut into thin lengthwise strips

  • 250 gr cherry tomatoes

  • 1/2 teaspoon salt

  • 1/4 teaspoon nutmeg

  • pepper to taste

  • 1/2 cup grated Parmesan cheese

  • 1/2 cup finely chopped parsley

Preparation:

  • Bring water to a boil in a large pot. Add the gnocchi and cook until they float (3-5 minutes or according to package instructions). Drain.

  • In a skillet over medium-high heat, melt the butter. Cook until the butter turns golden brown (around 2 minutes).

  • Add the scallion and zucchini, cook stirring occasionally until soft (2-3 minutes).

  • Add the tomato, salt, nutmeg, and pepper to the skillet, continue cooking and stirring occasionally until the tomato becomes soft (1-2 minutes)

  • Add the Parmesan cheese and parsley to the sauce, stir, then add the gnocchi, coat well with the sauce, and serve.
