This refreshing lemonade is quite easy to make and contains both fruit and vegetables. You can enjoy it as a snack or alongside lunch or dinner.

250 gr. of peeled and diced carrots
2 cups of water
3 cups of pineapple juice
3/4 cup of lemon juice
Place the carrot in a medium pot (over medium-high heat) with the two cups of water. Bring to a boil, reduce heat and cover. Cook for approximately 30 minutes or until the carrot is very soft. Then strain and let cool and place in a blender, add one cup of pineapple juice and blend until well mixed.
Pour the carrot mixture into a pitcher, add the remaining pineapple juice and lemon juice, stir. Cover and place in the refrigerator for a maximum of 24 hours. If it thickens too much, add additional water.
Serve.
