1 package turkey sausages
1 head Chinese mustard greens
1 sweet pepper
1/2 cup canned pineapple juice
1 tablespoon soy sauce
1/2 teaspoon powdered ginger
1/2 teaspoon onion powder
1 tablespoon cornstarch
1/2 cup pineapple chunks
Slice the sausages into thin rounds. Heat a skillet over medium-high heat and spray with cooking oil. Place the sausages in the skillet and stir-fry until golden.
While the sausages cook, cut the Chinese mustard greens into large pieces, separating the leaves from the stem or harder part (both will be used). Cut the sweet pepper into small cubes.
Add the sweet pepper and mustard stems to the skillet. Stir well and let cook.
In a bowl, combine the pineapple juice, soy sauce, ginger, onion powder, and cornstarch. Stir well.
Add the mustard leaves, pineapple, and sauce to the skillet. Stir everything well and bring to a boil. Allow to thicken and stir again. Serve.
