2 cups unsweetened almond milk
2 ripe bananas sliced into rounds (1 1/2 banana diced and 1/2 banana sliced)
1/4 teaspoon almond extract
1/4 teaspoon vanilla extract
salt
2 cups oatmeal
2 tablespoons unsweetened cocoa powder
2 tablespoons honey
1/3 cup toasted walnuts, finely chopped
pinch of cinnamon
2 tablespoons semi-sweet chocolate chips
In a large pot over high heat, add the milk, 1 3/4 cup of water, the diced bananas, almond and vanilla extracts and a pinch of salt, bring to a boil.
Once it has boiled, add the oatmeal, cocoa, and 1 tablespoon of honey to the pot, reduce heat to medium.
Cook stirring frequently until the oatmeal is cooked, 6 to 7 minutes.
Serve the oatmeal in 4 bowls, top with the banana slices, walnuts, remaining honey, cinnamon and chocolate chips.
