This recipe is a fun way to consume vegetables and protein. Very easy to prepare and uses a small amount of ingredients. We can use it for lunch or dinner.

Grams of fat: 3 gr. equals half a fat serving
Grams of protein: 26 gr. equals 4 protein servings
Grams of carbohydrate: 12 gr. equals one vegetable/carbohydrate serving

1 large cucumber
1 large can of tuna in water, drained
2 tablespoons light cream cheese, can be garlic flavored
salt to taste
4 cherry tomatoes cut in half
Cut the cucumber in half (lengthwise), and scoop out all the seeds with a spoon.
Chop the cucumber filling into small pieces, and combine in a bowl with the tuna, cream cheese, and season with salt. Mix well.
Fill the cucumber halves with the tuna mixture. Place 4 cherry tomato halves on top of each half.
Serve at room temperature or cold.
