This recipe is a fun way to consume vegetables and protein. Very easy to prepare and uses a small amount of ingredients. We can use it for lunch or dinner.

  • Calories: 190 kcal.

  • Grams of fat: 3 gr. equals half a fat serving

  • Grams of protein: 26 gr. equals 4 protein servings

  • Grams of carbohydrate: 12 gr. equals one vegetable/carbohydrate serving

Ingredients:

  • 1 large cucumber

  • 1 large can of tuna in water, drained

  • 2 tablespoons light cream cheese, can be garlic flavored

  • salt to taste

  • 4 cherry tomatoes cut in half

Preparation:

  • Cut the cucumber in half (lengthwise), and scoop out all the seeds with a spoon.

  • Chop the cucumber filling into small pieces, and combine in a bowl with the tuna, cream cheese, and season with salt. Mix well.

  • Fill the cucumber halves with the tuna mixture. Place 4 cherry tomato halves on top of each half.

  • Serve at room temperature or cold.
