1/2 cup fresh chives, finely chopped
6 anchovy fillets in oil, finely chopped
2 tablespoons olive oil
2 tablespoons sherry vinegar
1 teaspoon whole grain mustard
1/2 teaspoon black pepper
1/4 teaspoon salt
2 cups cherry tomatoes, halved
In a large deep bowl, combine the chives, anchovies, oil, vinegar, mustard, salt, and pepper. Stir well.
Gently add the tomatoes and mix until everything is coated with the anchovy sauce.
Serve chilled or at room temperature.
