Ingredients:

  • 1/2 cup fresh chives, finely chopped

  • 6 anchovy fillets in oil, finely chopped

  • 2 tablespoons olive oil

  • 2 tablespoons sherry vinegar

  • 1 teaspoon whole grain mustard

  • 1/2 teaspoon black pepper

  • 1/4 teaspoon salt

  • 2 cups cherry tomatoes, halved

Preparation:

  • In a large deep bowl, combine the chives, anchovies, oil, vinegar, mustard, salt, and pepper. Stir well.

  • Gently add the tomatoes and mix until everything is coated with the anchovy sauce.

  • Serve chilled or at room temperature.
