Strawberries with Balsamic Vinegar and Ricotta Cream

This recipe can be enjoyed as a dessert or snack. Simple to prepare and a creative way to consume fruits and protein.

Ingredients:

  • 1 cup low-fat ricotta cheese

  • 2 tablespoons honey

  • 1/2 teaspoon vanilla extract

  • 3 tablespoons balsamic vinegar

  • 2 tablespoons sugar

  • 1 large box of strawberries, cleaned and cut into quarters

  • 2 tablespoons fresh basil, cut into thin strips

Preparation:

  • Place the ricotta cheese, honey, and vanilla extract in a food processor. Process until everything is combined and has a smooth texture, approximately 1 minute. Transfer to a deep bowl and refrigerate for 2 hours.

  • In a small pot, place the balsamic vinegar and sugar, bring to a boil. Simmer over low heat for 2 minutes, stirring constantly. Remove from heat and let cool completely.

  • In a deep bowl, place the strawberries and basil, add the vinegar mixture, and stir well.

  • Divide the ricotta cream into 4 portions and serve in small dishes. Place a portion of strawberries on top of the cream. Serve
