1 cup low-fat ricotta cheese
2 tablespoons honey
1/2 teaspoon vanilla extract
3 tablespoons balsamic vinegar
2 tablespoons sugar
1 large box of strawberries, cleaned and cut into quarters
2 tablespoons fresh basil, cut into thin strips
Place the ricotta cheese, honey, and vanilla extract in a food processor. Process until everything is combined and has a smooth texture, approximately 1 minute. Transfer to a deep bowl and refrigerate for 2 hours.
In a small pot, place the balsamic vinegar and sugar, bring to a boil. Simmer over low heat for 2 minutes, stirring constantly. Remove from heat and let cool completely.
In a deep bowl, place the strawberries and basil, add the vinegar mixture, and stir well.
Divide the ricotta cream into 4 portions and serve in small dishes. Place a portion of strawberries on top of the cream. Serve
