This recipe is quick to make and excellent for lunches or dinners with friends. We can serve it over couscous or with any other side dish of your choice.

1 teaspoon olive oil
3 garlic cloves, finely chopped
1 medium tomato, diced
1/4 cup fresh basil
180 gr raw and cleaned shrimp
1 cup cooked couscous
Heat the oil in a skillet over medium heat. Add the garlic and tomato with a pinch of salt.
Let the tomato cook for a bit and release its liquid. Add the shrimp and basil to the skillet. Cook, stirring all ingredients together for approximately 5 minutes.
Serve the shrimp over the couscous and drizzle with a bit of finely chopped basil on top.
