This recipe is quick to make and excellent for lunches or dinners with friends. We can serve it over couscous or with any other side dish of your choice.

  • Calories: 430 kcal.

  • Grams of Fat: 8 gr. equivalent to 1.5 fat servings

  • Grams of Carbohydrates: 46 gr. equivalent to 3 carbohydrate servings

  • Grams of Protein: 43 gr. equivalent to 6 protein servings

Ingredients:

  • 1 teaspoon olive oil

  • 3 garlic cloves, finely chopped

  • 1 medium tomato, diced

  • 1/4 cup fresh basil

  • 180 gr raw and cleaned shrimp

  • 1 cup cooked couscous

Preparation:

  • Heat the oil in a skillet over medium heat. Add the garlic and tomato with a pinch of salt.

  • Let the tomato cook for a bit and release its liquid. Add the shrimp and basil to the skillet. Cook, stirring all ingredients together for approximately 5 minutes.

  • Serve the shrimp over the couscous and drizzle with a bit of finely chopped basil on top.
