This recipe is very quick to prepare and combines shrimp rich in healthy fats, potassium and proteins with couscous, a quite accessible carbohydrate option for everyone. It is a nutritionally well-balanced dish.

Grams of fat: 10 gr. equals 2 servings of fat
Grams of protein: 30 gr. equals 4 servings of protein

1 cup couscous
1/4 cup white raisins
2 tablespoons olive oil
salt
600 gr. peeled and cleaned shrimp
1 cup cherry tomatoes cut in half
1/2 teaspoon paprika
juice from half a lemon
Preheat oven to broil.
Boil 1 1/4 cups of water. Combine in a deep dish the couscous with the raisins, and 1 tablespoon olive oil. Add the hot water to the mixture and cover the dish with plastic wrap until the water has been completely absorbed by the couscous, approximately 5 minutes.
In a dish combine the shrimp, tomatoes, one tablespoon olive oil and the paprika. On a baking sheet arrange the shrimp separately, place in the oven and cook until pink, approximately 4 minutes. Once ready, drizzle with lemon juice.
Serve couscous and shrimp in equal portions
