450 gr lean ground beef
2 teaspoons chili powder or flakes
1 small can sweet corn
1 can whole black beans
400 ml fat-free beef broth
1 can diced tomatoes
sour cream
chives
Salt to taste
Season the meat with chili powder and salt, place in a pot (sprayed with cooking oil) over medium-high heat and cook for 6 minutes or until the meat is browned, stirring constantly to break up the meat. Once cooked, drain excess liquid if any.
Add to the pot with meat the corn, beans, beef broth and tomatoes, bring to a boil. Cover and reduce heat, simmer for 10 minutes. Uncover and continue cooking for 5 more minutes, stirring occasionally.
Serve in soup bowls and top with a teaspoon of sour cream and chives.
Bon appétit!
