This recipe is perfect for those rainy nights typical of this season. Very quick to prepare and you’ll want to make it again. Quite low in calories and fats.

  • Calories: 193 kcal.

  • Grams of carbohydrates: 20 gr. equals 1 carbohydrate serving

  • Grams of protein: 20 gr. equals 2.5 protein servings

  • Grams of fat: 3 gr. equals half a fat serving

Ingredients:

  • 450 gr lean ground beef

  • 2 teaspoons chili powder or flakes

  • 1 small can sweet corn

  • 1 can whole black beans

  • 400 ml fat-free beef broth

  • 1 can diced tomatoes

  • sour cream

  • chives

  • Salt to taste

Preparation:

  • Season the meat with chili powder and salt, place in a pot (sprayed with cooking oil) over medium-high heat and cook for 6 minutes or until the meat is browned, stirring constantly to break up the meat. Once cooked, drain excess liquid if any.

  • Add to the pot with meat the corn, beans, beef broth and tomatoes, bring to a boil. Cover and reduce heat, simmer for 10 minutes. Uncover and continue cooking for 5 more minutes, stirring occasionally.

  • Serve in soup bowls and top with a teaspoon of sour cream and chives.
