250 gr. of short pasta (penne)
cooking spray oil
450 gr. of lean ground beef
1 tablespoon of olive oil
1 1/2 cups of finely diced onion
5 cloves of garlic, finely minced
3/4 teaspoon of salt
1 tablespoon of flour
2 cups of skim milk
1 can of diced tomatoes, drained
1/2 cup of regular cream cheese
90 gr. of light cream cheese
3/4 cup of shredded mozzarella cheese
2 tablespoons of fresh parsley, finely chopped
Preheat the oven to broil.
Cook the pasta according to package directions, without using salt or oil. Drain.
Heat a skillet over medium-high heat. Spray with cooking spray oil. Add the meat and sauté for 5 minutes or until browned, remove from skillet and set aside.
Clean the skillet and add the olive oil, place the onion and sauté for 4 minutes, add the garlic and sauté for 1 minute. Add the meat with a pinch of salt to the onion mixture, then the flour and cook for 1 minute, stirring constantly.
Add to the skillet the milk, tomato, and cream cheeses, stirring and bringing to a boil. Add the pasta.
Place the pasta mixture in a deep baking dish sprayed with cooking spray oil. Sprinkle the mozzarella cheese on top and place in the oven for 4 minutes or until the top is golden.
Remove and sprinkle with fresh parsley. Serve.
Enjoy!
