1 cup apple cider and 2 tablespoons separate
1/4 cup brown sugar
3 large apples, unpeeled and cut into very thin slices
2 teaspoons cornstarch
1/2 teaspoon vanilla
Place 1 cup of apple cider and brown sugar in a small pot over medium-high heat, bring to a boil.
Add the apples and cook over low heat (simmering), stirring constantly until soft, approximately 10 to 12 minutes.
In a small deep plate combine the cornstarch with 2 tablespoons of cider. Add to the pot with apples and cook stirring until thickened.
Remove from heat and add the vanilla, stir.
