2 strips of bacon
1/2 cup of ice cubes
1/2 red onion cut fine
1/2 cup of sour cream
1/4 teaspoon of lemon zest
1 tablespoon of lemon juice
salt and pepper to taste
6 1/2 cups of broccoli cut small
1/3 cup of golden raisins
2 tablespoons of toasted sunflower seeds
In a skillet over medium-low heat, cook the bacon until golden, about 8 minutes. Transfer to a paper towel, remove extra fat, cut into small pieces and set aside.
Combine 1 cup of water, half a cup of ice and the onion in a small deep bowl. Let sit for 10 minutes, then remove, drain and dry.
Combine in a deep bowl the sour cream, lemon zest, 3/4 teaspoon of salt and another of pepper, stir. Add the broccoli, onion and raisins. Stir and cover, refrigerate for 1 to 4 hours.
Before serving stir again, season with salt and pepper if necessary. Sprinkle with the bacon and sunflower seeds.
