Creamy Broccoli Salad

This option can be used as a side dish for meats, is quite easy to make, and we are consuming a dish rich in nutrients.

Approximate Nutritional Content: 1 serving (recipe makes 6)

  • Calories: 107 kcal.

  • Grams of fat: 4.5 gr. equivalent to 1 fat serving.

  • Grams of protein: 5 gr. equivalent to half a protein serving.

  • Grams of carbohydrates: 14 gr. equivalent to 1 carbohydrate/vegetable serving

Ingredients:

  • 2 strips of bacon

  • 1/2 cup of ice cubes

  • 1/2 red onion cut fine

  • 1/2 cup of sour cream

  • 1/4 teaspoon of lemon zest

  • 1 tablespoon of lemon juice

  • salt and pepper to taste

  • 6 1/2 cups of broccoli cut small

  • 1/3 cup of golden raisins

  • 2 tablespoons of toasted sunflower seeds

Preparation:

  • In a skillet over medium-low heat, cook the bacon until golden, about 8 minutes. Transfer to a paper towel, remove extra fat, cut into small pieces and set aside.

  • Combine 1 cup of water, half a cup of ice and the onion in a small deep bowl. Let sit for 10 minutes, then remove, drain and dry.

  • Combine in a deep bowl the sour cream, lemon zest, 3/4 teaspoon of salt and another of pepper, stir. Add the broccoli, onion and raisins. Stir and cover, refrigerate for 1 to 4 hours.

  • Before serving stir again, season with salt and pepper if necessary. Sprinkle with the bacon and sunflower seeds.
