This recipe is very easy to make and quite refreshing. A perfect idea for those who like to eat with their hands. The best part: it contains very few calories.
Calories: 100 kcal.
Grams of fat: 3 gr. equals half a fat serving.
Grams of carbohydrates: 7 gr. equals half a carbohydrate serving.
Grams of protein: 12 gr. equals 1.5 protein servings.
Note: nutritional information may vary according to the quantity and type of ingredients used, as well as the portion size.
2 tablespoons lemon juice.
1 tablespoon vegetable oil
1/2 teaspoon paprika
salt and pepper to taste
3 peaches cut into very thin slices
1/2 cup red onion cut into thin strips
1 tablespoon jalapeño chile cut finely
2 cups cooked shredded chicken
8 large clean lettuce leaves
Cilantro for garnish
In a large deep plate, combine lemon juice, oil, and paprika, mix well. Season the mixture with salt and pepper.
To the oil mixture add the peach slices, jalapeño and shredded chicken. Mix well and make sure all ingredients are well coated with the oil mixture.
Place lettuce leaves on a plate and divide the chicken mixture among all leaves. Sprinkle a little cilantro on each wrap.
Serve either rolled up or open.
