Lettuce wraps with chicken and peach

This recipe is very easy to make and quite refreshing. A perfect idea for those who like to eat with their hands. The best part: it contains very few calories.

Approximate Nutritional Content: 1 wrap (recipe makes 8 servings)

  • Calories: 100 kcal.

  • Grams of fat: 3 gr. equals half a fat serving.

  • Grams of carbohydrates: 7 gr. equals half a carbohydrate serving.

  • Grams of protein: 12 gr. equals 1.5 protein servings.

Note: nutritional information may vary according to the quantity and type of ingredients used, as well as the portion size.

Ingredients:

  • 2 tablespoons lemon juice.

  • 1 tablespoon vegetable oil

  • 1/2 teaspoon paprika

  • salt and pepper to taste

  • 3 peaches cut into very thin slices

  • 1/2 cup red onion cut into thin strips

  • 1 tablespoon jalapeño chile cut finely

  • 2 cups cooked shredded chicken

  • 8 large clean lettuce leaves

  • Cilantro for garnish

Preparation:

  • In a large deep plate, combine lemon juice, oil, and paprika, mix well. Season the mixture with salt and pepper.

  • To the oil mixture add the peach slices, jalapeño and shredded chicken. Mix well and make sure all ingredients are well coated with the oil mixture.

  • Place lettuce leaves on a plate and divide the chicken mixture among all leaves. Sprinkle a little cilantro on each wrap.

  • Serve either rolled up or open.
