This dish is refreshing, delicious and perfectly combines proteins and vegetables. Plus, we can use the dressing for any other salad and why not pair it with toast as well.

Ingredients:

DRESSING:

  • 15 gr of basil or one handful

  • 10 mint leaves

  • 1 clove garlic, finely chopped

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon olive oil

  • 1 tablespoon honey

  • 1 tablespoon water

  • 1/2 teaspoon mustard

  • 1/4 teaspoon salt

SALAD:

  • 2 cups mixed greens (lettuce, spinach, mustard)

  • 1/2 sweet bell pepper

  • 1/4 cup sweet corn

  • 85 gr cooked shrimp

  • 2 tablespoons basil dressing

Preparation:

  • To make the dressing: finely chop the basil and mint. Mix the herbs together with the garlic, vinegar, oil, honey, water, mustard and salt. Stir well and set aside.

  • Assemble the salad: place the lettuce mixture on a plate, top with the sweet bell pepper in strips, sweet corn and shrimp.

  • Drizzle with the dressing and serve.
