Couscous Salad with Mango and Beans

Nutritional Content: one cup

Carbohydrates: 40 gr, 8 gr are fiber equals 2 portions
Protein: 8 gr equals 1 portion
Fat: 3 gr equals half portion

Ingredients:

  • 1/2 cup couscous
  • 1 cup water
  • 2 teaspoons olive oil (10gr)
  • 1 can black beans, drained
  • 1 ripe mango cut into cubes
  • 2 tablespoons green onion/chives
  • 1/3 cup cilantro chopped
  • 1 jalapeño cut thin (optional)

Preparation:

  • Cook the couscous: place water in a pot and bring to a boil, add the couscous, stir and cover. Let cook for 5 minutes or until all water is absorbed.
  • Place the remaining ingredients in a large deep plate.
  • Once the couscous is ready, add it to the ingredient mixture and stir.
  • Place the salad in the refrigerator until it reaches the desired temperature, approximately 30 minutes.
