Grams of carbohydrate: 45 gr. equivalent to 3 servings of fruit/vegetable/carbohydrate

2 1/2 cups of kale
30 gr. of walnuts
1 tablespoon of lemon juice
1 tablespoon of maple syrup
1 tablespoon of apple cider vinegar
1 teaspoon of Dijon mustard
a pinch of salt
1 medium apple
Cut the kale into thin strips.
In a blender place half of the walnuts, lemon juice, maple syrup, vinegar, and salt. Blend until everything is incorporated.
Cut the apple into thin slices.
Place the kale, apple, and dressing in a large ziploc bag, mix.
Place on a plate with the remaining walnuts on top.
