1/3 cup plain yogurt
2 tablespoons mayonnaise
1 tablespoon lemon juice
1 tablespoon apple cider vinegar
1 teaspoon honey
500 gr shredded carrot
1 large green apple
2 tablespoons fresh mint, finely chopped
salt to taste
In a small deep bowl combine the yogurt and mayonnaise until well incorporated. Then add the lemon juice, vinegar, and honey. Stir.
Shred the carrot and apple. Place in a large deep bowl and combine.
Mix the carrot and apple with the mayonnaise mixture, stir well, add the mint on top and season with salt.
Serve chilled.
