This salad pairs perfectly with any main dish, is very refreshing and easy to prepare.

Ingredients:

  • 1/3 cup plain yogurt

  • 2 tablespoons mayonnaise

  • 1 tablespoon lemon juice

  • 1 tablespoon apple cider vinegar

  • 1 teaspoon honey

  • 500 gr shredded carrot

  • 1 large green apple

  • 2 tablespoons fresh mint, finely chopped

  • salt to taste

Preparation:

  • In a small deep bowl combine the yogurt and mayonnaise until well incorporated. Then add the lemon juice, vinegar, and honey. Stir.

  • Shred the carrot and apple. Place in a large deep bowl and combine.

  • Mix the carrot and apple with the mayonnaise mixture, stir well, add the mint on top and season with salt.

  • Serve chilled.
