Spicy Lemon Tilapia

This recipe is perfect for hot days since it's refreshing and easy to prepare (can be made in less than 30 minutes). If you wish, you can remove the chile to make it without that spicy flavor.

This recipe is perfect for hot days since it’s refreshing and easy to prepare (can be made in less than 30 minutes). If you wish, you can remove the chile to make it without that spicy flavor.

Ingredients:

  • 1 tablespoon of olive oil

  • 1/2 teaspoon of chile flakes

  • 2 cups of spinach

  • 12 asparagus spears

  • 2 tilapia fillets

  • 2 green onions

  • 2 lime wedges

  • salt and pepper to taste

Preparation:

  • To make the spicy oil, combine the olive oil with the chile flakes in a small deep plate. Microwave for 30 seconds, set aside.

  • For each serving use enough aluminum foil to wrap the fillets into “pouches”. Place half of the spinach and asparagus in each piece of foil, it should go in the center.

  • Place the fish fillet on each bed of spinach, cover with green onion, chile oil and lime juice equally distributed for each fillet. Season with salt and pepper.

  • Make the aluminum pouches, covering each fish. Bake at 350 degrees for 10 to 12 minutes or until cooked.
