1 3/4 cups of flour
1 teaspoon of ground cinnamon
1/2 teaspoon of baking soda
1/2 teaspoon of ground ginger
1/4 teaspoon of baking powder
1/4 teaspoon of salt
6 tablespoons of butter at room temperature
8 tablespoons of granulated sugar
1/4 cup of brown sugar
1 egg
1/4 cup of molasses
Combine in a deep bowl the flour together with all dry ingredients (up to the salt).
Place in another deep bowl the butter, 5 tablespoons of sugar, and the brown sugar. Beat with a hand mixer until you obtain a smooth texture, approximately 5 minutes. Add the egg and beat for 30 more seconds. Incorporate the molasses and beat until everything is well combined.
Combine the flour mixture together with the butter mixture, mix everything well. Cover and let rest for 30 minutes.
Preheat the oven to 350 degrees and cover a baking sheet with parchment paper.
Make 24 balls with the cookie dough and roll (coat) in the remaining sugar (3 tablespoons). Place them on the baking sheet.
Bake for approximately 12 minutes, remove from the oven and let cool on the baking sheet for 3 minutes, then transfer to a plate.
