This dish works perfectly as a side, very low in calories and simple to make. The only caveat is that it can be high in fat (olive oil, rich in unsaturated fat), so moderation is recommended. It's a different way to prepare mushrooms.

1 lemon
1 tablespoon fresh thyme
2-4 tablespoons olive oil
500 gr mushrooms
4 tablespoons grated Parmesan cheese
salt and pepper to taste
Preheat the oven to 200 degrees.
Zest the lemon. Combine in a deep bowl the zest with the thyme and olive oil.
Clean and slice the mushrooms. Place them separately in a single layer on a baking sheet. Drizzle with half of the olive oil mixture and season with salt and pepper.
Bake for 10 minutes. Remove from the oven and cover the mushrooms with Parmesan cheese. Bake again for 5 minutes.
Remove from the oven and drizzle with the remaining olive oil and lemon juice to taste.
