This option is a way to consume your daily fruit intake. This jelly is a bit different from traditional ones, but I think it can be a great addition to our menu.

5 cups of orange segments without peel.
1 tablespoon of orange zest
1 cup of sugar
1/4 cup of fresh orange juice
juice of one lemon
1 tablespoon of fresh thyme, finely chopped
pinch of salt
Place the oranges, orange juice, lemon juice, and sugar in a pot over medium-high heat. Bring to a boil, stirring constantly to mix all ingredients.
Once boiling, reduce the heat to low and add the pinch of salt, stir. Let simmer for 30 minutes and then add the thyme and orange zest, stir.
Continue cooking until the ingredients are reduced by at least one third of the initial amount. It should have a sticky texture. This process can take at least an hour. If desired, you can add a bit more sugar to thicken the jelly further.
Once the desired cooking point is reached, remove from heat and let cool. Place in jelly jars and refrigerate.
Enjoy!
