Flourless Chocolate Muffins

This recipe is perfect for treating yourself any day of the week. They’re quite easy to make and you can use them for parties or to indulge yourself at any moment. The portion is one muffin, so we shouldn’t overdo it with these delicious buns.

Approximate Nutritional Content: 1 muffin (recipe makes 6)

  • Calories: 200 kcal.

  • Grams of fat: 7 gr. equals 1.5 fat servings

  • Grams of protein: 7 gr. equals 1 protein serving.

  • Grams of carbohydrates: 31 gr. equals 2 flour servings.

Ingredients:

  • 1 1/4 cups regular oats.

  • 1/4 cup almonds

  • 1/4 cup unsweetened cocoa

  • 1/4 teaspoon salt

  • 1 ripe banana

  • 1 tablespoon vanilla

  • 1 tablespoon honey

  • 1 tablespoon maple syrup

  • 1 tablespoon molasses

  • 1 egg

  • 1/2 cup low-fat plain yogurt

  • 28 gr. chocolate chips

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon baking powder.

Preparation:

  • Preheat oven to 375 degrees.

  • In a food processor, blend the oats, cocoa, almonds and salt to make the “flour” for the muffins.

  • In a deep bowl mash the banana, and add the vanilla, honey, molasses, maple syrup, egg and yogurt. Stir well. Add the chocolate chips. Stir again.

  • Mix the dry ingredients with the wet ingredients. Then add the baking powder and baking soda. Combine well.

  • In a muffin baking pan spray with oil and distribute the batter evenly in the different compartments (6). Bake for 18 minutes.
