8 yellow potatoes, cleaned with skin, cut into quarters
1 cauliflower cut into florets
8 whole garlic cloves, unpeeled
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon pepper
Chives, thinly sliced
Preheat oven to 425 degrees. Line a baking sheet with aluminum foil and spray with cooking oil. Set aside.
In a large deep plate, place the potatoes, cauliflower, garlic cloves, oil, salt, and pepper. Stir well until all ingredients are coated with oil.
Place the mixture evenly on the baking sheet, put in the oven, and roast for 35 to 45 minutes or until golden, stirring once.
Remove and place on a serving plate and garnish with chives.
