Roasted potatoes and cauliflower

This dish is the perfect side for any protein. It’s quite simple to prepare and requires only 5 ingredients. It’s packed with nutrients and has a delicious garlic flavor.

Ingredients:

  • 8 yellow potatoes, cleaned with skin, cut into quarters

  • 1 cauliflower cut into florets

  • 8 whole garlic cloves, unpeeled

  • 2 tablespoons olive oil

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

  • Chives, thinly sliced

Preparation:

  • Preheat oven to 425 degrees. Line a baking sheet with aluminum foil and spray with cooking oil. Set aside.

  • In a large deep plate, place the potatoes, cauliflower, garlic cloves, oil, salt, and pepper. Stir well until all ingredients are coated with oil.

  • Place the mixture evenly on the baking sheet, put in the oven, and roast for 35 to 45 minutes or until golden, stirring once.

  • Remove and place on a serving plate and garnish with chives.
